My grandma was used to prepare a soup with beans, tomatoes and other legumes almost every Sunday. I loved it and I've never been able to find that flavor again anywhere else. Now I make my own version of that soup with many more vegetables and spices and that's a sort of tribute to my beloved nonna.

all ingredients are in random quantities. In Italian we say "quanto basta": a sufficient quantity of every ingredient and that is a truly relative and subjective quantity.

coconut milk (optional)
spices (curry, turmeric, cumin, ginger, chili, pepper...)

Chop all the greens.
Prepare a soffritto with olive oil, onions, leeks and carrots.
Add all the dried legumes and brown them a little, pay attention not to burn them.
Add water with a vegetable stock cube or a vegetal broth if you have it already. Fill the pot with it. In my case a use a 2 liters pressure cooker.
Add all the vegetables.
Add coconut milk (optional) and spices.
I use pressure cooker to speed up the cooking process and avoid leaving the dried legumes to soak the day before.
Cook for around 30-40 minutes with a pressure cooker, longer if you use a normal casserole.
I prefer a smooth texture so I put everything in a blender.
Serve with pasta, rice, cous cous or croutons.
