Goi ga is essentially a chicken salad, and we’d have this at every Vietnamese get together . Vietnamese parties are almost always potluck style, and it’s the perfect side dish to accompany any fried/rich dishes with its zingy flavor. Simple in nature, it gets lots of flavor from the punchy fish sauce dressing!

For the salad:
1/4 cabbage
1 fennel
1/2 red onion
1 bunch coriander
1 bunch mint
For the chicken:
500g chicken breast
Small knob of ginger
1 green onion
Salt
Topping:
Handful of chopped, roast peanuts
Handful of sprøkstet løk
Dressing:
2 tbsp fish sauce
2 tbsp sugar
10 tbsp water
1 lime
1 tsp sambal

Salad:
1) Finely cut into shredded pieces the cabbage, fennel, and red onion. Alternatively, use a mandolin to shred the vegetables into thin, almost translucent ribbons.
2) Finely cut the herbs and mix into the salad.
Chicken:
1) Boil water with knob of ginger, green onion and salt.
2) when the water comes to a boil, add your chicken breast and cook until internal temperature reaches 74C (15-20 minutes). Take the chicken out to cool.
3) Shred the chicken breast into but sized pieces.
Tip: save the cooking water for broth!
Fish sauce:
1) Combine all ingredients together and mix.
Assembly:
1) combine the salad mixture, chicken, and dressing. Toss to combine.
2) add your toppings!
Ekstra info
Typically, I would fry my shallots, but I’ve found that sprøkstet løk works a treat!
Optionally, you can serve the salad with rice crackers!
